Not hating on hxh bc each arc is really good but a larger overall story that connects each arc is pretty nonexistent. If it had that (and was actually a finished work) it would be the best shonen but without it idk

Michiko no Hatchin, it's fairly similar to Watanabe's most popular work
Try Samurai X/Rurouni Kenshin. Watch only the first two arcs. The second might be the best Shonen arc I've seen so far. Then again, I'm not that much of an anime expert but I've seen most of the popular stuff.
