Not to be harsh but you're also taking your own opinion as fact when it's not. People have different taste and it all depends on who you ask. Not everyone thinks they're going to look nicer.
There's also no replacing film stock. The processing is natural. With a trained eye, digital will always look immoral in a way lol
Filming digital with cine lenses ie grabbing cine lens attachments for your iphone or cameras brings that authentic look to your images.
The glass is where the bread is butter. The stock (film, digital, iphone etc.) is like the lineage but only you the story teller makes a great story.
You are comparing men in full uniform with someone who dress so commonly familiar in an everyday setting this isn't a 1:1 comparison

Maybe something to do with FPS? film cameras are 35mm which gives this movie effect and phone cameras record in mode that reflects reality

The first video would have been shot and displayed at a lower fps which people are accustomed to seeing as more professional (as long as its not too low). 24 fps is standard for the most cinematic look that movies are shot on. So the 1st video might be 24 fps or it could be even lower I'm not sure. A lot of camcorders and I think phones typically default film at 30 fps which has a "television" / cheaper look. I would guess this is the main difference that makes the old video look better.
Some people are saying f stop but I don't think that would make a difference for how professional it looks.
Film vs digital would be another difference, tons of people still prefer film because it still has great resolution and supposedly looks more natural than digital
I think lens focal length could be part of it too. The first video is probably a longer focal length whereas now we're accustomed to seeing so much phone footage with default wide angle short focal lengths that I think it's started to look cheap and unprofessional
Also when people shoot on phones they are usually holding it with their hands, it's not stabilized like a cinema or tv camera
