So some people believe demons are just impersonal parts of the human psyche, and some believe they are more and have an intelligence of their own
As a Christian I agree with the second theory, and this could be backed up by the existence of evocation

Not sure of any specific literature unfortunately. But you can take a look at the Lesser Key of Solomon (Geotia) which lists every evil spirit out there in detail. And I believe it gives some methods of summoning
