Anyway, in that case, why not just make an entirely different villain? Using the body but not the memories/person is a half-done way of doing things. That’s why I initially compared it to Bio-Broly
it’s both unoriginal and doesn’t give the real nostalgia factor you’d want. It’s unsatisfying on two fronts

I’m guessing white with MUI because white is pure. When Goku’s thoughts were clear and pure he went from black hair and incomplete to white and pure

Hakai energy has been largely depicted as purple from what I remember so maybe that’s why Vegeta’s destruction form would be that color

Super Saiyan originally was going to have Red eyes. The anime released SSJ before Toriyama gave the official color page. The anime gave the transformation blue eyes. So Gohan new form having red eyes and white hair is a call back to the original design idea that SSJ was going to have white hair and red eyes. This is why in the movie it's a shot where Gohan resembles Teen Gohan. It's a deliberate shot for nostalgia and to show off an original concept.
Every transformation introduced in Super have some connection to a beta design Toriyama wanted to use, but never had a chance to use it. SSJ4 is another example of a design that wasn't used. SSJ3 originallt had Goku grow his tail back like SSJ4 and look more slim like SSG. So SSJ3 was originally a combination of SSJ4 and SSG.
Ultra Ego is also a call back to one of the original designs for SSJ3. Goku hair originally was going to get slightly longer like Vegeta in UE, lose eye brows and grow a tail.
UI is also another unused transformation idea by Toriyama where he was going to make the hair white instead of Gold/Yellow.
All the different hair color changes are to make them more distinguished from the original SSJ form. Toriyama took a real issue to how SSJ2 wasn't that much different from SSJ1 and he would constantly forget SSJ2 was a thing.
TL;DR It's nothing really deep about the transformation colors and designs it's just Toriyama reusing old design concepts and reworking them.

the reaction to that one shot of Gohan and Piccolo’s new forms at the end was so overblown
I've pretty got the whole movie spoiled to me against my will.
pretty much accepted that this was going to happen tbh
still got to get to a theater to get the full experience
