    When I was on campus I would eat steak 4 or 5 meals a week I would experiment every time. What timings do you guys do.

    Mid thickness cut:
    I heat my pan on mid heat for 5 minutes, cook one side for 3 minutes, then other side 3 then another 30 seconds. Like oyster cuts

    Season with salt/pepper, warm it in the oven on 350 for a bit and then cook it in a pan with clarified butter on high/med-high heat just enough to get a nice sear. Aim for around 135 degrees, high end of medium rare.

    Medium rare, cast iron pan with copious amounts of butter, flipping every minute or two and using an internal thermometer S/O SamTheCookingGuy
