    i still ain’t tell my pops he gonna spazz, as a chef himself he’s been telling me since i was literally a toddler to avoid the resturaunt field and never ever become a chef 😭 he probably subconsciously programmed my stubborn ass

    Only thing is that there needs to be a seafood entree. Can't go wrong with salmon

    we don’t really have anything we’re famous for in my area and the demographic is middle aged wealthy white people that do tv shows and tv movies plus their kids

    the issue is my budget is much lower than it should be since by Marriott rules we aren’t allowed to just erase the old menu we still have to be able offer those items, so i have like half the budget than i should to order items

    pre cooked fresh out the freezer 😭 when they ordered this i would push for them to buy it togo so that i don’t have to see their reaction to it

    I started cooking like 10 years ago just because it’s the easiest job to get, never had true passion for it but i stumbled into a chef position and they desperately wanted to completely overhaul the menu, this is what i have so far.

    Appetizers:
    -Bone in Wings - Sauce choices: Honey BBQ, Dr. Pepper BBQ(haven’t thought of a name), Buffalo, Chili Lime, and Hot(my own hot sauce)
    -Mozzarella Sticks
    -Hummus
    -Chips and Salsa(Homemade)
    -Half Size Cesar Salad
    -Half Size Cobb Salad

    Entrees:
    -Bistro Burger(can add bacon or cheese) Lettuce Tomato Onion Pickle and Garlic aïoli
    -Grilled Cheese on Texas Toast with homemade tomato soup
    -Blackened Chicken Tenders(stolen from popeyes lol)
    -Buffalo Chicken Sandwich (fried or grilled with blue cheese or ranch, lettuce and tomato)

    • Cesar Salad or Cobb Salad
      -Margherita Flatbread(roasted tomatoes and or pepperoni as a topping,also debating make this one an appetizer instead)

    Haven’t been given a budget for sides or dessert yet but i’m hoping i can pull off homemade fries, tater tots for the kids chicken tenders, mashed potato’s, broccoli, and asparagus as far as sides. Haven’t thought of dessert

    first off congrats my bro i spent many years as a line cook in fine dining establishments so i know the work it took to get there

    only thing is im suprised there isnt like a pasta option on the menu like a cajun pasta or a red sauce with italian sausage and peppers but im sure you only have such a limited budget ur playing it safe and i dont blame you
