I don't make many mexican dishes tbh. Frito pie a classique still. Lentil tacos are fire. Dishes like carna adovada where a big slab of animal is the main thing aren't really feasible to do vegan. But you can make some banger tamales, flautas, enchilidas, etc. vegan either with lentils, faux meats, or mushrooms.
I just kinda grew out of cheese before I was even vegan so yeah. Was never one of my favorite foods. My cooking leans more asian/mediterranean/middle eastern these days as well. Lots of falafel wraps u kno.
but what about pizza
Ehh haven’t had a good vegan pizza yet but I know there are some recipes that use mozzarella made from cashews so that might worth a try

thought the same thing at one point. Once was a heavy meat eater, never thought I would be vegetarian then I went vegetarian but never thought I would go vegan and now I'm vegan...my only next step is to go raw which I ironically say I cant see myself doing lol
