well for competitive you'd need completely need pokemon and either max level them to bottle cap Iv's or breed for perfect iv's and then ev train.
but as for your team for base game content seems fair

It's nothing to do after you do that except do rank battle online but you need to get competitive pokemon. If you're not into that you can shiny hunt. If you don't want to do that then let this s*** gather dust and wait for the DLC or play one of these fire games coming out in 2020. This year is loaded.
I swear I feel like the DLC is going to only be 2 hours long and can be beat in 40 mins.

Bro go look up a good competitive team. You'll get dirted using a Rhydon, Noctowl, and quilfish. The Meta is setup around some mons that can one shot everything such as Dracovish. Competitive is a lot deeper than just getting perfect IVs and EVs that's why a lot people don't get into it. You need to build a team with synergy or you'll get destroyed every time.

i'll add another 2-3 hours of exploration and hunting Pokemon i don't have yet

Yeah you can use a perfect IV ditto with a destiny knot hold item. That's how IVs get passed on easy. Then you have to get the right nature for a pokemon also.

When you’re walking through tall grass... what’s the difference between when a ! pops up and when a ? pops up when you run into a Pokémon?

On your Pokédex it has “Current Recommendations”..... And then lists a couple Pokémon
Is there a bonus or something to catching them immediately or something? Or is it just random

I’ve beaten 1 or 2.... but it’s nearly impossible when the DynaMax Pokémon keeps putting up that f***in shield that takes 5 hits to take down
And it’ll do it like 2-3 times in one raid... that’s 10 or 15 attacks wasted

It all depends on what the npc mons are. If they weak to the raid mons moves, there’s nothing you can really do about it except to try and kill em as fast as possible before all your lives are used up.
I recommend to just used Zacian/Zamazenta, Max out attack EVs, level it to 100 and if you need to hyper train it’s stats and make sure it’s got a decent move pool for coverage.
It’s signature move (iron head turns into it when you have the held item) does double damage vs Dynamax mons
