just watch stalker and go from there. his first film is relatively good to start with as well.
weirdly enough, the first ever Tarkovsky film i watched was his student film "The Killers"
He only has 7 films so I'd recommend just going in order.
If you really only want to watch only a few then Stalker, Solaris and Mirror imo
Just watch them all in order, starting with The Steamroller and the Violin and ending with The Sacrifice, since he doesn't even have a dozen films

A few of his films don't have much dialogue relative to their runtimes, so that might also be a plus for you since you dont care for how Russian sounds

Because i couldn’t sit through his most famous film without falling asleep, a film never felt so long to me and it has since then always stopped me from checking any of his other stuff out
I mean, i have to at one point to truly know if his work can click with me but i’m procrastinating
