    made food52.com/recipes/87664-lamb-burger-with-carmelized-fennel-and-onion
    a few notes:

    • recipe calls for half a onion and half a fennel to be caramelized for 4 burgers. i dont get this. i caramelized exactly half an onion and fennel but it was like not enough for 3 burgers let alone 4 lol. i would rather just do a whole onion and whole fennel its nonsensical to me to do half. i also mandolined it rather than sliced it so maybe that impacted but idk id rather b more generous with caramelized onions than less
    • recipe calls for said half onion and fennel to be caramelized for 10 min. that amt of time is entirely too little. again, maybe my onion was sliced thinner than the recipe images but caramelized onion takes like 40 min for even lightly caramelized onions so idk
    • resting the patties for 10 min was entirely too long imo it was lukewarm
    • and a 12 min cook time on medium also felt long--mine were just fully cooked at the end and i did 10

    really tasty though even with all that

    subbed watercress with micro arugula
    subbed chevre with good quality sheepsmilk feta
    storebought brioche buns toasted heavily with bacon fat


    russ and daughters pastrami lox w scallion cream cheese and capers tomatoes onions on an everything bagel--hit

    also want to lev's residency at bistrot leo. really good, i enjoyed everything. felt like a very unique voice which i liked

    'hugging sabich': eggplant, tahini, amba, parsley & soft egg
    eggplant was beautifully roasted, was most excited for this one

    burik: egg, potato, grated tomatoes, green spicy, tahini, pickle plate

    'white fish cigars': bass marinated in harissa, olives, lemon, cilantro wrapped in phyllo and served w spicy lemon juice. these hit
    'pasta burekas': spinach & ricotta, grated tomato, parmesan. i think the burekas bit was just bc of the rolled shape tbh, felt v italian in influence rather than israeli but still v good. also idk why this one is burekas while the other is burik i think theyre the same thing???? idk tho if anyone else does fl free 2 state it bc i am curious indeed

    everything shnitzel: "garlic aioli, harissa ketchup, mustard & salad"

    harissa ketchup hit

    bonbon eclairs with chocolate bitter orange and sicilian pistachios. idk why bonbon eclair per se these r cream puffs

    malabi knafeh: rose syrup & Sicilian pistachios
    very good. best knafeh ive had ever but i have genuinely only ever had like 2 knafehs so u know grain of salt

    might b the most unique take on israeli food in nyc tbh

    Also i couldnt figure out how the hugging sabich was a sabich at all

    I giess its just deconstructed and served w no bread lol but was very confused when i was trying to match the ig pic to the menu
    Rly good tho i could eat it again tn
