I don't think they rushed it, Cory Balrog said he had the script finished before they even started developing the 2nd I'm pretty sure.
So, he seemingly had the story fleshed out, but I'm sure that could've changed. Who knows if he's even working on this one since he working on a new IP

The mural at the end of the game depicts Kratos as a God finally worshipped and loved by the people, he has no reason to go to any other mythology.
Atreus actually leaves on a journey to find the giants and says he "knows where to look". We can assume its Atreus going to Egypt or wherever the next mythology takes place.

The only thing that felt rushed about Ragnarok was the ending imo. Not having Surtr as a final boss battle AFTER Odin was a crime

Atreus lacks the allure of Kratos is the issue. I'm not gonna say it'd be easy to replace a character like Kratos either.
He's got a goat voice, goat theme, his fighting style as well.
Atreus at this point isn't a strength fighter, he's more finesse, with fits with the whole Loki thing. Hard to imagine him as a mainstay really.
They get a GOW going in Egypt and they can end the series for good after that

It's just difficult in any medium for the iconic character to be replaced with a new face and that new face pans out to be as successful or beloved as their predecessor.
It's quite the gamble to take and when you think of examples of it in film, games, books,etc I don't think it really works out as we'd hope. It's rare that it does succeed imo
