Can't help ya as much as breakfast, I eat the same oatmeal everyday and just add different fruit on it lmao.
I also like just doing any kind of buddha bowl, which is any kind of starch (brown rice/sweet potatoes/potatoes) with some kind of beans (chickpeas/black beans/lentils), some frozen veggies roasted, and whatever kind of sauce you want.
Roasted sweet potatoes + broccoli + brussel sprouts + black beans + lime juice is really good.
Rice + chickpeas + grape tomatoes + some green vegetable + hummus always works too

stir fries are the move. get a few different sauces so that the base is essentially the same (tofu and veggies - get a bunch of frozen veg) but diff sauces make it feel like you’re not having the same thing all the time. i’m rotating a store bought sweet Thai chilli sauce, almond-soy sauce and ginger-soy sauce.
some of my other go-tos are chickpea salad sandwiches, tofu scramble, and various south asian dishes like chana and butter ‘chicken’ (i usually sub w cauliflower)

What’s the easiest/cheapest way to replace the protein from meat? I used eat a lot of chicken so I never struggled with it before.
Also any simple vegan recipes? An issue is that I live within people who want to continue eating meat so I can’t really buy too many vegan products

In terms of protein, whole grains, hummus, any kinds of pulse (peas, beans, nut butters of any kinds, lentils etc.) will be kind of a main source, you can also use soy/pea protein powder if you're lifting a lot or anything.

I take a calcium-magnesium supp with some other stuff for bone and joint health and then the protein powder I use occasionally has every essential vitamin and mineral you need in it. Aside from that I just eat a varied diet and my bloodwork is A1.
