been busy af man but if you're still looking definitely start with Cornell 77. I think that is definitely the most accessible live show that gives you a taste of what the dead is about.

id start with one of these 3, might be the most canon:
Live/Dead - pure 60s acid rock, most psychedelic
Europe 72 - blend of psychedelia and a lot of folk/rootsy elements
Cornell 1977 - accessible like the other user mentioned but much of the psychedelia is gone at this point. possibly their most famous show
great partially live 1972 archival album from this San Francisco power trio who never released anything when they were active. sloppy in the right ways especially the vocalist is unhinged. guitarist is really going nuts with the wah wah

hiiiighly recommend buying or torrenting the criterion restoration but otherwise this is the by far the greatest document of the psych era... blows Woodstock out of the water. Better lineup, smaller crowd... the scene was still all pot and LSD before heroin had started to taint things. just looks like the best vibes ever,
great to legendary performances by a s***load of goats that were so fresh they only has one or two albums out.
