I also only recently got really into anime (like two years ago).
But interestingly enough, the first anime I ever watched was Evangelion when I was a teenager. It was a very impactful experience (still my all time fav), but it's funny because after finishing the series I didn't feel the need to explore the medium further. It was YEARS before I watched any other anime. And I can't even explain why
I suggest you just stop there tbh

That’s fair. I feel like if I had one outsider choose an anime to start with, itd be NGE. It’s just a full package
That said, there are lots of other compelling anime like ones I’ve listed above if you’re ever curious and want something that kinda scratches that itch (there’s really nothing like NGE tho)

Fr? I feel like is not a show for everyone, but it is definitely unique - even outside of anime. For me it was simply an otherworldly experience, never again replicated by any series (animated or live action).
